817. Baked Potato Bar


It was so much fun preparing this serve-yourself baked potato bar. The only cooking involved (unless you make your own pulled meat or shawerma) is baking the potato, which is as easy as wrapping in foil and throwing in an oven. All the rest is prep work.
Cut, slice, dice and grate the accompaniments of your choice, lay them pretty on serving platters, pile the hot baked potatoes on a separate platter and let the people compile their own loaded baked potatoes.
I chose for the accompaniments: meat shawerma, diced mixed color peppers, pickled jalapeno, sliced green onion, grated cheddar cheese, lightly steamed broccoli florettes, sliced olives, and sour cream. This idea is highly customizable to suit all tastes.


Ingredients:

large potatoes
sour cream
grated cheddar
sliced spring onion
diced colored peppers
sliced olives
sliced jalapenos
lightly steamed broccoli florettes
meat shawerma or pulled meat


Method:

Wash and dry the potatoes well. Poke a couple of times with a fork all over.
Cover individually and tightly with foil.
Bake the foil-wrapped potatoes in a 400F oven for about 90 minutes.
During this time, lay the toppings prettily in serving platters.
To serve, pile the baked potatoes still in their foil wrapping high on a separate serving platter together with the topping platters.
Unwrap the potato, slice lengthwise in half without piercing the other end, and stuff the potato with your desired toppings.
