823. Tossed Caprese Salad


Fresh mozzarella is a completely different beast from the packaged mozzarella we buy for our lasagnas. If you don't live somewhere they make it locally and sold the day of making, your next best shot is getting the "fresh"ones sold swimming in a package of its own water.
The mini mozzarella are cute and functional in this fresh Italian salad, but a large fresh mozzarella ball torn into shreds are just as fine. Caprese is a simple Italian salad composed simply of tomato, basil, and mozzarella cheese (red, while, and green are the colors of the Italian flag), and this salad is a play on the original classic one, using fresh basil pesto in the dressing.


Ingredients:

1 bag mixed salad
1 cup cherry tomatoes
1 cup mini fresh mozzarella balls
1 avocado
2 Tbsp fresh pesto
4 Tbsp olive oil
1 lemon, juice
1/2 tsp salt & pepper


Method:

In a salad bowl, toss the salad leaves, chopped avocado (if using), halved cherry tomatoes, and fresh mozzarella balls.
Put all the dressing ingredients (pesto, lemon juice, olive oil, salt and pepper) in a jar and give it a good shake.
Dress the salad and serve immediately.
