Green beans in tomato is a dish so wide-spread that many countries consider it their own. Iraq definitely, but also Turkey, Greece, and Cyprus. In fact, this was one of my mother's favorite dishes to prepare. You can eat it hot, warm, or cold.
It is as simple as sauteeing some onion, tossing in your fresh green beans, and tossing in a sauce made from tomato paste and water.
Ingredients:
450g fresh green beans
3 Tbsp olive oil
1 onion, chopped
2 garlic cloves, grated
2 Tbsp tomato paste
2 cups hot water
1 tsp salt & pepper
Method:
Top and tail the green beans; set aside.
Dissolve the tomato paste in the hot water; set aside.
Saute the chopped onion and grated garlic in the olive oil until transparent.
Add the green beans, tomato sauce, and seasoning.
Bring to a boil, reduce to a simmer, cover and let simmer for 15 to 20 minutes until the beans still have a bite to them.
Serve hot, warm, or cold.

As Salaamu Alaykum ukhti, subhan'Allah just a few days ago I had some of these beans at home ready to use in an Asian fish cake recipe but then I decided against the idea and added them to north African spiced soup with lamb and carrots.
