873. Aubergine Puffs


Is there any food wrapped in puff pastry and baked to a flaky, golden, and crisp finish that isn't good? Some examples right here on MCW are: shrimp, meat leaf, cheese, and zaatar among others.
These puffs are stuffed with fried aubergines, cooked minced meat, and shredded mozzarella. All components and assembly can be prepared ahead of time and baked just before serving.


Ingredients:

250g puff pastry
1 large aubergine, sliced and fried
250g cooked minced meat
3/4 cup grated mozzarella
egg wash, for brushing


Method:

Preheat oven to 400F.
Roll the puff pastry into a large rectangle and cut into 15 rectangles or squares (3 by 5).
Lay two slices fried aubergine on one end of each rectangle.
Top with a tablespoon of cooked minced meat and another tablespoon of grated mozzarella.
Enclose the filling by rolling starting from the filling end.
Brush the top with egg wash.
Bake in the oven for about 30 minutes until puffed and golden.
Best served warm.
