1271. Crispy Feta Block Appetizer


An appetizer to share, or a meal for one, the choice is all yours. Feta does not melt upon heating. But it does get lusciously softened to the perfect scoopable/spreadable consistency. This recipe breads and fries a whole block of feta, but that's not all. The fresh tomato salad/salsa is a must.
It balances the richness of the breaded and fried cheese as it is smeared over some bread. Top your bites with the quickly-marinated tomatoes and get comfortable.


Ingredients:

1 block feta cheese (~250g)
1 lemon, zest grated
1 egg, beaten
1/2 cup breadcrumbs
1 cup sliced cherry tomatoes
2 Tbsp olive oil
salt & pepper
oil, to fry


Method:

Make the marinated tomato: combine the sliced cherry tomatoes, salt, pepper, and olive oil. Set aside to marinate while preparing the feta.
Mix the grated lemon zest into the breadcrumbs; set aside.
Carefully dip block of feta in the beaten egg to coat, then cover on all sides with the bread-lemon mix.
Pan fry the breaded feta until golden on all sides. Carefully transfer to serving dish.
Serve with the marinated tomatoes and bread.
