1272. Whole Salmon Roast in Banana Leaves


Salmon is a great fish to serve from the family table to the guest's. It is easily palatable by most, and makes for a good starter point to make fish part of your family's weekly meal rotation.
There is nothing special per se about this recipe: your standard lemon-garlic-dill stuffing in the cavity. But wrapping the fish in banana tree leaves lends the flesh a succulent tenderness without prior marination or manipulation. This method works just as well for a single-portion fillet as it does for the entire fish. Cooking times vary depending on the weight of the fish.


Ingredients:

3-4 kg whole salmon, cleaned
1 bunch dill
1 head garlic cloves
1 lemon, sliced
salt & pepper
2-3 Tbsp oil
banana tree leaves



Method:

Preheat oven to 400F.
In the cavity of the fish, salt and pepper generously, then stuff the dill, lemon slices, and garlic cloves.
Season the exterior of the fish with salt, pepper, and oil.
Wrap the fish as gently yet as tightly as you can with the banana tree leaves, enclosing completely.
Place on a baking sheet and bake for 45 minutes to 1 hour until the fish is cooked through.
Remove from the oven and let stand at room temperature 10 minutes.
To serve, tear open the banana tree leaves to expose the fish, then serve the fillets with extra lemon wedges.
