1314. Kimchi Grilled Cheese Sandwich


Warm sandwiches come in many shapes and forms, not to mention flavors. This is a grilled cheese sandwich, incorporating a very unconventional ingredient: kimchi. Kimchi is a fermented cabbage concoction known to be Korean, but has spread throughout Asia, and now to the western world.
The result is a flavor experience: slight tang and heat combined with the warmth and comfort of melted cheese. The sesame in the butter on the bread crusts further emphasizes the Asian feel and adds a textural component.


Ingredients: (makes 1)

1 Tbsp butter, at room temperature
1/2 clove garlic, grated
1 1/2 tsp raw sesame seeds
2 tsp Asian chili paste, optional
2 slices thick cut bread
1/2 cup kimchi, roughly chopped
2 Tbsp fresh basil leaves
50g kashkaval or cheddar cheese, sliced
50g mozzarella cheese, sliced


Method:

In a small bowl, mix together the butter, sesame seeds, and garlic.
Spread the outside of each slice of bread with sesame garlic butter. On the inside of half of the slices of bread, spread with chilli paste, if using, then evenly layer the cheeses, kimchi, and basil. Add the top piece of bread, buttered side facing up.
Place the sandwich in the pan and cook until golden on each side, about 3-5 minutes per side.
Serve while still warm.
