1329. Chocolate Truffle Cake


The number of chocolate cakes on MCW deserves a compilation post. Another chocolate cake recipe is probably not warranted, but can you even say that about chocolate cakes? This one just might be second to the most decadent of the lot.
The taste and texture is that of a chocolate truffle; so rich and dense, made possible by baking the cake in a low temperature oven and a water bath. The topping of whipped cream and fresh berries of optional, but not really, since it makes the cake so much better (isn't that always the case with chocolate cakes anyway?).

Ingredients:

200g dark chocolate, finely chopped
1/4 cup butter
1/3 cup brown sugar
1/4 cup cream
3 eggs
1 Tbsp flour



Method:

Preheat the oven to 300F.
Place the chocolate, butter, sugar, and cream in a saucepan over low heat and stir frequently until the mixture is melted and smooth.
Place the eggs in a large bowl and beat lightly. Whisk in the chocolate mixture. Add the flour and fold until just combined.
Pour into a lightly greased loaf tin lined with parchment paper.
Place the tin in a deep baking tray and pour in enough boiling water to come halfway up the sides of the tin.
Bake for 1 hour and 30 minutes. Remove from the oven, cool to room temperature before serving topped with whipped cream and berries.
