1330. Mexican Macaroni


Taco-flavored minced meat and cooked pasta are folded in a cheesy beschamel sauce for the best Mexican-inspired pasta there is.
Disclaimer: you will need two pots and a pan to realize this easy and delicious dish, so assess your dish-washing tolerance for the day before hand.


Ingredients:

2 cups dry macaroni
500g minced meat
1 bag taco spices
2 Tbsp butter
2 Tbsp flour
1 cup milk
1 cup broth
2 cups grated cheese
1/2 cup chopped jalapeno


Method:

Cook the pasta as per packet instructions.
Meanwhile, cook the minced meat with the taco seasoning pack until browned and cooked through; set aside.
Meanwhile, in a separate pot, make a roux of the butter and flour. Slowly add the milk and broth, whisking all the while to avoid lumps. When the mixture is thickened, stir in the grated cheese, cooked meat, chopped jalapenos, and drained cooked pasta.
Serve immediately.
