1423. Fetteh Chicken Musakhan


Chicken musakhan is a hundreds' old recipe that also happens to be the national dish of Palestine. While the most authentic version looks like this, MCW is such a fan of the dish that we have multiple spin-offs of it: kubba, spring rolls, and cones. This fetteh spin-off was the next natural evolutionary step.
We like to have noth fried bread and rice in our fettehs. This was then topped off with the rich tangy mixture of the chicken musakhan, yogurt (of course), and an array of delicious toppings from jeweled pomegranate (sub for zarshk if not on hand), vibrant chopped coriander, and golden fried pinenuts (not to be missed).



Ingredients:

For the rice:
2 cups rice
1 1/2 tsp salt
1 1/2 tsp allspice

For the chicken:
6 onions, halved, finely sliced
1/4 cup olive oil
450g chicken breasts, boiled and shredded finely (reserve the water)
1 1/2 tsp dry mint
1 stock cube, crumbled
2 Tbsp sumac
1/2 tsp lemon salt (or juice of 1 lemon)
1/2 tsp pepper
3/4 tsp salt

For the assembly:
2 large pita breads, cubes and fried
3 cups plain yogurt, room temp
1/2 cup pinenuts, fried
1/2 cup fresh coriander, chopped
1/2 cup pomegranate seeds
2 Tbsp sumac, extra




Method:

To make the chicken:
Saute the onion in the olive oil over medium heat until starting to caramelize (around 15 to 20 minutes). Stir in the dry mint, stock cube, sumac, lemon salt, salt and pepper. Stir in the shredded boiled chicken. Stir in a cup to two cups of the chicken water. Set aside.
To make the rice:
Toss the washed and drained rice in 2 Tbsp oil, add the salt and allspice; saute for a minute more.
Add boiled water to just cover the rice, immediately cover and reduce heat to low. Leave 20 minutes, until water is absorbed and grains fluffy.
To assemble:
Scatter the fried bread over the base of your large serving dish.
Pile the rice over the bread.
Scatter the re-heated chicken over the rice, pouring any extra broth on top.
Pour the yogurt over the chicken.
Finally sprinkle the fresh pomegranate seeds, fried nuts, chopped coriander, and extra sumac.
