1422. Turkish Cheese Borek


I have spoken unreservedly previously about my love for Turkey. It's nature, culture, people, and of course, their food. Borek is a popular street food there which, like gozleme, comes in vegetarian or carnivorous forms. This home made cheese borek has layers upon layers of flakey fillo pastry and blend of really good cheese all brought together with a milk-egg sauce.
Obviously, the types of cheese you use can be customized as per personal preference.



Ingredients:

8 sheets fillo pastry
100g butter, melted
1 cup milk
3 eggs
salt & pepper
3 Tbsp vinegar
1 cup grated mozzarella
1 cup grated haloomi
1 cup grated kashkaval
1 cup crumbled feta
1/2 cup chopped parsley
sesame, just a sprinkle



Method:

In a beaker, mix the milk, eggs, vinegar, and seasoning well. Set aside.
In a bowl, mix the cheeses and parsley; set aside.
Working one sheet at a time, brush the sheet with melted butter, fold in half, and lay in your baking dish. Start layering the borek like a lasagne in the following way:
2 sheets butter fillo + 1/3 of the cheese mix + 1/4 of the egg mix.
2 sheets butter fillo + 1/3 of the cheese mix + 1/4 of the egg mix
2 sheets butter fillo + 1/3 of the cheese mix + 1/4 of the egg mix
Final layer: 2 sheets butter fillo, cut into squares, pour the last of the egg mix, and sprinkle lightly with sesame.
Bake in preheated 400F oven for 25-30 minutes until puffed and golden.
Serve warm or room temp.
