1653. Saffron Baked Custard


This is essentially a creme caramel, but without the burnt sugar and not inverted. It is a saffron-infused custard flan baked in a water bath to yield the most satiny-silky result.
Very popular in the Arab Gulf region during Ramadan, its cooling and comforting properties make it an almost five ingredient dessert wonder.


Ingredients:

2 cups powder milk
5 eggs
1 can sweet condensed milk
1/2 cup sugar
1 cup thick cream
1 full tsp saffron
5 cups water



Method:

Blend everything together and pour into a deep oven-safe dish.
Please the dish in a larger one, and pour enough water in the bigger dish to come about half-way the custard dish.
Bake in preheated 350F oven for 1 hour. It will still be jiggly in the middle but will set as it cools.
When cooled to room temperature, transfer to the refrigerator and let chill overnight. Serve chilled.
