1657. Mushroom Cottage Pie

Cottage pie, essentially cooked beef mince topped with mashed potatoes and bakes, is an ultimate comfort food. How you flavor the mince is very important. I have a recipe or two of cottage pie and its variations here on MCW. This version uses Worcestershire sauce quite liberally, and is further elevated with the addition of mushroom. Worcestershire sauce can be lessened or added depending on your taste. Since the dish won't be baked for too long, you will already want your mince cooked as you like it, to the thickness and consistency you want it. Do not expect it to thicken more during baking.



Ingredients:

6 large potatoes
100g butter
1 cup cream salt and pepper
750g beef mince
1 large diced onion
2 cups frozen veggies (peas & carrot)
2 cups sliced button mushrooms
2 large crushed garlic
1 teaspoon dried oregano
1/2 cup Worcestershire sauce
2 stock cubes
1 heaped Tbsp tomato paste
3 heaped Tbsp flour
2 cups water (maybe more for consistency)


Method:

Peel and cube the potatoes, boil while you prepare your filling. 
Brown the beef mince, drain excess water, add some olive oil along with the onion & cook for a few minutes. Add garlic & mushrooms, cook for a few more minutes before adding the frozen vegetables. Cook until the vegetables are defrosted add the tomato paste, Worcestershire sauce, stock cubes, salt, pepper, and oregano. Cook for another minute. Add the flour and mix, pour in the water, bring to a simmer, let it cook on low for 10-15 minutes until thickened.
Mash your potatoes with butter, cream, salt & pepper.
Place the beef mix in a deep baking dish, top with the mash, bake at 400F for 25minutes, then broil until golden.
