1683. Oreo Cheesecake Soft Cookies

Better than expected, these oreo cookies are better than the oreos themselves. 

Large soft cookies, one is enough per person.

Ingredients: Makes 8 large cookies

For the cookie:

110g unsalted butter, melted and cooled

140g granulated sugar

1 large egg

1 tsp vanilla extract

215g plain flour

15g cornflour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

6 Oreo, broken into small chunks

For the icing:

90g unsalted butter, softened

90g cream cheese, room temperature

250g icing sugar

1 tsp vanilla extract

3 Oreos, broken into small chunks

Method:

Whisk the melted butter and sugar until combined. Add the egg and vanilla, whisk until incorporated.

Add the flour, cornflour, baking soda, baking powder, salt, and crushed oreos. Mix until combined.

Scoop into 8 balls, flatten slightly on baking sheet.

Bake in preheated 320F oven for 10 minutes. Let cool completely on baking sheet.

Make frosting: whisk the butter and cream cheese, add sugar and vanilla, whisk until smooth. Spread icing on fully cooled cookies and sprinkle with broken oreos.
