1685. Baked Spinach Feta Toast


This egg-feta toast will become a favorite once tried. You can use fresh spinach or frozen, depending on what you have on hand. Apparently, it is a local classic in Bulgaria, and goes by the name of Prinzesi.  Served with lashings of hot sauce and fresh tomatoes on the side, it can be a breakfast meal, or a light lunch or dinner. Any melty cheese can be used in place of cheddar, such as mozzarella or kashkaval.
  


Ingredients:

2 cups freshly chopped spinach or half cup frozen thawed
4 slices sourdough bread, lightly buttered
2 eggs
1/2 cup crumbled feta
½ cup grated cheddar 



Method:

In a pan on medium heat saute the spinach in a touch of olive oil until wilted and cook fully. Cool it and squeeze out all of the water if necessary.
To a bowl add the spinach, eggs, salt, feta, pinch of salt and grated cheese and mix fully until combined.
Add a few tablespoons of the mixture on top of each slice of lightly buttered bread and spread it out all the way to the crust.
On a low rack put your oven on BROIL, top broiler on only, keep a very close eye on them. Mine took 10 minutes but it will really depend on the oven. 
As soon as they are golden and feel firm on top they are ready. Serve with lashings of hot sauce and fresh tomatoes on the side.
