1721. Crispy Beans and Whipped Feta


This is an accidentally healthy and low carb snack that is innovative and tasty. A can of large butterbeans is coated in seasoning and cornflower and baked to a crisp. I use my air fryer. Then, while still warm and crispy, is is served next to some whipped feta. 
You can make whipped feta using the MCW recipe (lemon olive oil, etc) or literally just blend up some feta with a bit of milk and serve.


Ingredients:

1 can butter beans
1 Tbsp olive oil
1 tsp galric powder
1 tsp onion powder
1/2 tsp salt and pepper
1/4 tsp chili flakes
1 Tbsp cornflour
2 Tbsp fresh rosemary

Whipped feta:
1 cup feta
2-3 Tbsp milk


Method:

Preheat oven or air fryer to 400F.
Mix together the cornflour, and all the seasonings. Rinse the beans, shake to get rid of excess water, and toss in the olive oil. Toss in the seasoned cornflour and the rosemary.
Spread on a non-stick baking sheet in a single layer and bake for 25 minutes until crispy, tossing halfway through.
Make the dip by blending the feta and milk. Serve immediately as they lose their crisp as they cool.
