January is incomplete without a healthy dose of oats. For me, I prefer my oats in the morning, but done right, they are great for on-the-go as well (like these muesli bars). I have posted an overnight muesli before, which is great for brunch, but this recipe (and four more coming up) is perfect for single serving. Other versions: refreshing blueberry-lemon, rich and nostalgic banana-peanut, tropical ananas-coconut, and the colorful carrot-walnut.
First up: raspberry and chocolate, adapted from the Domestic Geek's strawberry and chocolate overnight oats. Too often we neglect our breakfast. Too often we blame our weight gain on food, not the lack of food. When we deprive ourselves of (good and wholesome) food, our bodies go into starvation mode, and store up any food it gets directly into the fat reserves. But when we eat good and wholesome food constantly throughout the day and winding down in the evenings, our bodies actually shed extra weight because it is provided with a constant flow of nutrients for optimal body functions.
Ingredients:
1/3 cup oats
1 Tbsp chia seeds
1/4 cup plain yogurt
1/4 cup milk
1 Tbsp honey
1 tsp cocoa powder
1/4 cup raspberries
1 Tbsp chocolate, shavings
Method:
In a jar, put the oats then the chia seeds.
Pour over the milk (could be dairy or soy or nut milk of choice), and spoon over the plain yogurt.
Add the honey and cocoa.
Add the raspberries and finish off with the chocolate shavings.
Refrigerate overnight and consume next morning.
This could be heated in the microwave if desired, but make sure your jar is microwave safe.
