1628. Peanut Butter Oat Balls


With a black coffee first thing in the morning, these peanut butter oat balls are a feel-good way to start your day. Loaded with hidden nutrients, they taste more of a treat than a service for your health. 
I do like to take the extra step of roasting and cooling the oats, simply because I don't quite like the idea of consuming raw oats, plus the roasting gives an added depth of flavor.



Ingredients:

⅔ cup creamy peanut butter (160 g)
1 cup old fashion oat (100 g)
1 ½ Tbsp honey
2 Tbsp chia seeds
50g dark chocolate
¼ cup flax seed, powdered



Method:

Toast the oats in a 350F oven for 8-10 minutes; allow to cool completely.
In a food processor, pulverize the oats and chocolate as fine or as rough as you prefer.
Mix in all the other ingredients until well-combined.
Cover with plastic wrap and chill in the refrigerator 30 minutes.
Once done chilling, roll into approximately 1 inch (2.5 cm) balls. (Cover hands in a light layer of butter or oil to facilitate rolling and avoid getting sticky hands.) Store refrigerated in an air-tight container for up to 2-3 weeks.
