A silky Italian dessert, chocolate budino is a custard based thick pudding, topped with salted caramel and a whist of whipped cream to bring everything together.
The ingredients are readily available and a minor refrigeration stint is needed, preferably overnight.Ingredients: serves 8
1/3 cup sugar
5 egg yolks
2 cups heavy cream
225g semi-sweet chocolate
1/2 tsp sea salt
1/4 tsp vanilla
1/2 cup salted caramel sauce
flaky sea salt, for garnish
whipped cream, for garnish
Method:
Off-heat and in a medium sized saucepan, whisk together the sugar and the 5 egg yolks until fully combined. Whisk in the heavy cream, salt, and vanilla until fully combined.
Turn on the heat to medium low and continuously stir until the mixture thickens up and spreads slowly when a spoon is dragged through it, about 10 minutes. The mixture should not simmer, but just get the occasional bubble.
Add in the chopped chocolate, turn off the heat, and whisk until chocolate has fully melted.
Pour the mixture through a sieve to ensure smoothness, then divide into 8 ramekins.
Refrigerate, uncovered, for 2 hours or overnight until set.
Layer 1 tablespoon of salted caramel onto each of the budinos and finish with some flaky sea salt to garnish. Top with whipped cream.
