1958. Express Egg Rice

This express egg rice is a quick so nutritious and delicious meal that is put together in mere minutes especially if you have leftover rice available.
The eggs are cooked to a firm scramble in some butter and rendered spring onion. The warm rice is tossed in soy sauce, chili oil, and a touch of vinegar. The two come together for the perfect flavor combo.

Ingredients:

1 cup cooked rice, still warm
Sprinkle of salt and white pepper
2-3 Tbsp soy sauce
1-2 tsp chili oil
1 Tbsp vinegar
1 Tbsp butter
½ spring onion, sliced
2-3 eggs


Method:

In a bowl, combine the rice, soy sauce, chili oil, vinegar and salt and white pepper.
In a pan, saute the sliced spring onion in the butter then add the eggs. Scramble until well cooked, then add to the rice, mixing it in so they are integrated. Serve immediately.
