1871. Crispy Akawi Zaatar Pitas


For some reason, sambusak is an integral part of our Ramadan iftar table. These crispy akawi zaatar pita quarters completely replaced them this last Ramadan. 
Akawi is a salty, melty Arabian cheese studded with nigella seeds resulting in a very nostalgic flavor. Combined with zaatar and enrobed in a crispy olive oil soaked pita bread, the combination is a very pleasing one. This is baked in the oven, not fried. Fried in the oven, if you will.



Ingredients:

3 small pita breads
220g akawi cheese, sliced
3 Tbsp zaatar
olive oil




Method:

Open a pita bread from the seam to end up with two round breads. Brush inside and outside with olive oil. On one side, cover with a third of the sliced cheese and sprinkle with a tablespoon of the zaatar. Seal the bread, carefully cut into quarters, and place in single layer on a baking sheet. Repeat with the remaining quantity. Bake at 350F for 10 to 15 minutes, flipping half way through and watching carefully as it might start to burn at the 12-13 minute mark. Let cool for two minutes outside of the oven to allow to fully crisp, and serve warm.
