2086. Sweet Potato Waffles

Lately, I find myself trying to prioritize protein. It really does make a difference, being intentional about what you consume. Prioritizing protein in every meal does not need to look like scoops of powder in smoothies or a steak twice a day. Eggs are a near-perfect source of protein, and so versatile. These sweet potato waffles consist of only three ingredients, and make the perfect base for a meal. It can be topped with scrambled eggs, or minced meat taco filling, or baked merguez sausages with lashings of sauce. My favorite health foods are those that are completely enjoyable and do not leave you with a sense of deprivation.


Ingredients:

2 medium sweet potatoes, cooked and mashed
3 eggs
½ cup grated parmesan cheese



Method:

In a large bowl, mix together the mashed sweet potatoes, eggs, and parmesan cheese until fully combined.
Scoop the mixture into a greased waffle maker and cook until golden and slightly crisp on the outside.
No waffle maker? No problem. Simply cook the mixture in a frying pan like a flatbread or pancake until browned on both sides.
Top with toppings of choice (for ex. scrambled eggs, or minced meat taco filling, or baked merguez sausages) and enjoy it hot.
