606. Sausage Red Bean with Rice


Sausages for me are a breakfast food, served alongside an omelet or something.

Though this recipe is a typical dinner for, say, an American home, it was way out of my comfort zone to digest the idea of cooking a main meal dish of sausage. Which is why I wanted to try it.
It was good, but not great. I thing varying the type of sausage, to French merguez or Italian sausage or Turkish sujuk would have helped alot and made the dish more presentable.
It's got four different vegetables mixed inside, so it can't be all bad ;)
As it was just fine for an extremely casual dinner or lunch, and I think kids would like it too.


Ingredients:

400g sausage, sliced into circles
1 onion, chopped
1 green sweet pepper, diced
1 clove garlic, grated
1x400g can kidney beans, rinsed and drained
1x400g canned tomato (not drained)
1/2 tsp oregano
1/2 tsp chilli
1/2 tsp powdered garlic
1/2 tsp salt & pepper


Method:

Saute the sausage in a tablespoon of oil with the onion, green pepper, and garlic until vegetables have begun to soften.
Add the oregano, chili, powder garlic, and salt & pepper, stir.
Add the beans and tomato, stir, bring to a boil and simmer covered 20 minutes.
Serve over rice.
