189. Chicken Lollipops


Chicken lollipops are delicious appetizers, and can be as fancy or as simple as you like.
There is the Chinese version, and the spicy Indian version, and even the Southern States honey-mustard version.
But today I have included the recipe for the most simple version: plainly breaded chicken lollipops.
Usually there are deep fried. If you want to save on calories, you may spray them with oil and bake them instead.



Ingredients:

chicken wings
salt and pepper
flour for coating
eggs for dipping
breadcrumbs for breading
oil for frying



Method:

Cut each wing at the joint, discarding the wing tip.
Push the meat down of each half to gather around one end of the bone.
There are many instructional videos online that can help you.
Season the wings and proceed with the breading steps: first coat in flour, shake off excess.
Then dip in the beaten eggs, shake off excess. then coat with the bread crumbs, pressing gently to help adhere.
When all the wings are breaded, fry them in hot oil until golden brown.
Alternatively, spray with cooking oil and bake in a 375°F for 20 to 30 minutes, until golden brown.
