197. Apple Chips


I first tasted apple chips in France. They were a delight, and never would I have thought for a moment that I would be able to make them myself... even better tasting than the original!!
I'm not even sure if this qualifies as a recipe, since it has a single ingredient: apple.

The boring, common, under-appreciated apple is transformed to a delicate and alluring delight that explodes in your mouth with flavor you never thought possible to come from an apple!
If you don't have a mandolin, try to cut the apples by hand as thinly and evenly as possible.




Ingredients:

whole unpeeled apples



Method:

Preheat oven to 225°F.
Cut a whole apple on a mandolin or as thinly and evenly as possible by hand.
Arrange single layer on a non-stick baking sheet.
Bake for approximately 2 hours, flipping half-way through, until shrunken and golden.
They will crisp up upon cooling.

Note: baking time depends on thickness of slices. Mine were so thin that they were completely done in an hour. You may also add different flavors to the apples before baking, like cinnamon, sugar, lemon...
