342. Yogurt Roast Chicken


I think it is very important to know how to  roast a chicken.
It is basic, impressive, and a very touching way of telling those you feed "I care."
You can hardly get simper than Simple Roast Chicken, needing no more than salt and a chicken, but other combos are almost just as simple.

The yogurt is used first to marinate the chicken overnight, and then flavors the chicken with a certain je-ne-sais-quoi as it roasts. It is more common across the internet to see grilled yogurt marinated chicken, but roasting it is a whole other experience waiting to be explored.


Ingredients:

1 x 1.5kg chicken
1 1/2 cups yogurt
1 lemon, juice
1 Tbsp grated garlic
1 tsp salt
1/2 tsp pepper



Method:

Prepare the marinade by mixing well the yogurt, garlic, lemon juice, salt, and pepper in a bowl; set aside.
Butterfly the chicken by cutting with a kitchen scissors along the spine.
Break the breast bone to allow the chicken to lay flat.
Put the chicken in an oven-safe dish and pour the yogurt over and under the chicken.
Cover with plastic wrap and refrigerate overnight.

Allow the chicken to return to room temperature before roasting.
Roast uncovered in a 400F oven for one and a half hours.
Serve hot with rice or another grain and a refreshing light salad.
