946. Gem Lettuce Salad with Walnut Vinaigrette


For something so fancy-sounding, this salad is practically simplicity itself. Sweet, crunchy, young gem lettuce are halved and placed on the serving dish cut-side up. The simplest walnut vinaigrette is whipped up and tops the lettuce.
Add some cherry tomatoes for color and roughly chopped walnuts for some extra crunch, this salad is to be devoured immediately. If gem lettuce is unavailable, regular romaine lettuce hearts can be used.


Ingredients:

2 Tbsp apple vinegar
1 Tbsp finely chopped onion
2 Tbsp finely chopped walnut
1 tsp Dijon mustard
1/2 tsp salt & pepper
3 Tbsp olive oil
3 Tbsp neutral oil
6 gem lettuce


Method:

Halve the gem lettuce and arrange cut-side up on the serving dish.
Whisk together all the rest of the ingredients until emulsified and homogeneous.
Drizzle dressing over the lettuce.
Serve immediately, garnished with extra chopped walnut and halved cherry tomatoes for color.
