1095. Rahash Dessert Balls


Alhamdu lillah to He who has blessed us with another Ramadan, month of good, repentance, forgiveness, the holy Quraan, and jihad. May Allah grant victory in the struggle against our own nafs and against the enemies of Islam, allowing us to emerge with faces of noor, showered with His rida on those who seek it. Ramadan Mubarak.
I picked this recipe up from one of the countless faceless Saudi instagram cooking accounts. Given its shady origins, I was cautious in my approach, and proceeded carefully, expecting a failure. Besides a couple of adjustments to quantities of some ingredients, this dessert was a huge success.
By "huge success" I mean that not only did everyone love it, but it is a keeper of a recipe to be repeated insha Allah. So from scratch, it isn't, because it uses ready made digestive biscuits and tahini halva. Both of these can be home made if you wish. The sweet sesame flavor is reminiscent of my childhood, and I personally also loved this dessert.


Ingredients:

500g digestive bisuits
250g tahini halva
50g pistachio powder
1 tsp cardamom
250g geemar thickened cream

For the sauce:
1 can (400g) sweet condensed milk
2 Tbsp geemar
3 Tbsp tahini


Method:

Using a food processor, crush the digestives into a fine powder. Add the halva, pistachio powder, and cardamom; blitz until uniform. Add the thickened cream geemar, and blitz again until a dough is formed.
Shape the dough into bite-sized balls, and arrange on the serving platter. Refrigerate while preparing the sauce.
To make the sauce, simply blend the sweet condensed milk, geemar, and tahini until incorporated; drizzle over the balls in the serving platter. Refrigerate a couple of hours before serving.
