1254. {Air Fryer} Whole Roast Chicken and Vegetables


I looove my air fryer. Because I love it so much, I think I will routinely publish recipes geared towards it. Who's in?

If I had one complaint about the air fryer is that I need two of them. Case and point, this wonderful, wonderful recipe which takes 10 minutes to put together before delivering it to the trusty air fryer to finish off. I need one for the chicken and one for the vegetables to have them ready for the same meal. Otherwise, what a great investment for succulent, moist, and crispy exterior food.
You can use any spice mixture on the chicken. As for the vegetables, you can't go wrong with olive oil and salt. Throw in some garlic and herbs if you have them. The chicken was crispy allll around and impossible juicy and tender once we cut in. The vegetables had a wonderful balance of charred bits to cooked bits.n In case you are a sensible person and have just one air fryer, roast the vegetables in the oven or saute them to get the meal together.


Ingredients:

For the chicken:
1 whole chicken
1 tsp paprika
1/2 tsp thyme
1/2 tsp 7-spice
1/2 tsp citric acid
1 flat tsp salt & pepper
2 Tbsp oil

For the vegetables:
250g mushroom
300g brussel sprouts
250g baby potato
200g baby corn
2 cloves garlic, whole
salt
olive oil



Method:

For the chicken, mix all the spices and seasonings with the oil and rub all over the chicken. Place the chicken in the air fryer and cook at 190C for 1 hour and 10 minutes.
For the vegetables, halve the mushroom/brussel sprout/potato if too large and to allow to cook evenly. Sprinkle with salt & pepper and drizzle lightly with oil. Place in the air fryer basket and cook at 190C for 45 minutes, tossing halfway through. Time this to happen 30 minutes after the chicken so they finish at the same time.
Serve with a fresh salad and cold drinks. My favorite type of fast food.
