This is a delicious appetizer to share or can even be a light meal on its own if you are an appetizer affectionado. Soft, scoopable feta cheese with blistered flavorsome cherry tomatoes and a couple more surprises get soaked up with some crust bread to form a symphony in the mouth.
Air fryer convenience rules in anything small/medium portioned, but an oven would yield just as wonderful results by adding about 10 minutes to the cooking time.
Ingredients:
1 block feta cheese (200g)
1/2 cup cherry tomatoes, whole
2 Tbsp kalamata olives, chopped
1/2 red onion, sliced
1/4 red pepper, diced small
1/2 clove garlic, grated
sprinkle of herbs
chilli flakes, to taste
olive oil
crusty bread, to serve
Method:
In a small oven-safe dish, add onions, peppers, tomatoes, olives, garlic, herbs, and chili flakes.
Pour in 2 Tablespoons olive oil and mix together to combine.
Place feta block on top.
Place in air fryer basket and cook at 400F/200C degrees for 20 minutes. When time is up, wait 5 minutes and then remove pan from air fryer.
Transfer to serving plate and make sure to pour the hot oil over the veggies.
Serve with crusty bread.
