When we think of salads, it is mostly crisp cold versions of lettuce, tomato, and cucumber come to mind. Warm salads are also a thing inter-culturally, and serve a dual purpose of being delicious both warm and at room temp.
This Iraq version of a warm fresh fava or fresh broad bean salad hits the spot for delicious, nutritious, and delightful all at the same time.
Ingredients:
500g fresh whole fava beans
1/4 cup olive oil
1 onion, fine chop
3 cloves garlic, grated
s&p
1/2 cup chopped coriander
1 lemon, juice
Method:
Cut the beans into 1 inch pieces.
Cook the chopped onion in the olive oil until soft. Add the grated garlic and cook until fragrant. Add the beans and allow to sear, stirring only once in a while to allow the sear to develop. Add the chopped coriander, lemon juice, salt and pepper. Cover for 5 minutes.
Serve warm.
