Brethren to my nutella swirl muffins of yonder year, these banana nutella swirl muffins are just as dense, but have an added feel-good factor about them due to the inclusion of bananas.
This batch makes a dozen, and it was well worth making them for breakfasts on the go.
Do not try to make the batter smooth; the lumpier the better; because overbeating makes for a smoother batter but a tougher muffin.
It truly is simple enough to make in a bowl using a wooden spoon without requiring the aid of machinery.
Ingredients:
1 3/4 cups flour
1 1/2 tsp baking powder
3/4 cup sugar
1/2 tsp salt
2 large eggs, lightly beaten
1/2 cup melted butter
3 large very ripe bananas, mashed
1 tsp vanilla extract
4 Tbsp (or 12 tsp) Nutella, at room temp
Method:
Pre-heat oven to 350F.
Line muffin tins with paper liners.
In one bowl combine flour, sugar, and salt.
In another combine eggs, butter, mashed bananas, and vanilla.
Tip one into the other and gently fold together. You want your batter to be thoroughly mixed, but still lumpy. Divide mixture between cases, each one should be just about half full.
Take a teaspoon of slightly warm Nutella and pop onto the center of each muffin.
Use a toothpick to swirl the Nutella into the muffin for a marbled effect. Repeat with each muffin
Bake for 20-25 mins, until a skewer into the centre comes out clean.
Leave to cool and enjoy when still warm
