While the overly-healthy concept is enough to throw most people off, this dessert must be given a fair chance. I for one, had to google how to eat yogurt bark. Making it was less of a problem than eating it. Sure enough, the gone-in-three-bites serving size is recommended to avoid messy fingers and face.
Actually, this is the kind of treat I envision being stored in the freezer for when you're dieting and crave something bad. It numbs your tongue (in the most delightful way), while still giving you that sweet kick.
Ingredients:
2 cups plain greek yogurt
1/4 cup honey
1/2 tsp vanilla extract
strawberries, sliced
blueberries
bee pollen
Method:
Line a baking sheet with wax paper and set aside.
In the yogurt tub, stir in the honey and vanilla until thoroughly combined.
Transfer yogurt mixture to the lined baking sheet and spread it around to an even thickness. Top with berries and garnish with bee pollen.
Freeze for 2 to 3 hours, or until firm, cut into pieces and serve immediately. Must be kept in the freezer.
