1842. Raclette


Raclette is the name of a Swiss and French Alps cheese, but it is also the name of a dish on how it is consumed. I was gifted a two-person raclette candle-lit grill, and allowed myself the indulgence of a raclette dinner for two. 
It is traditionally served over boiled potato, and a side of cured meats and cornichons.


Ingredients:

a selection of charcuterie
some cornichons (pickles)
raclette cheese (min 5 slices per person)
boiled potatoes (min 2 per person)
a dressed salad 




Method:

You will need a raclette machine with those little trays to place over a flame to melt the cheese.
Arrange all the elements in individual or serving platters, including the cold cut meats, cornichons, and still-hot boiled potato. The salad is as a side. As the cheese melts, pour it over the potato and meats and enjoy. As you consume the molten cheese, make sure another portion is in the process of melting.
