235. Sumac Roast Chicken


Roasted chicken can be as simple or as elaborate as you want it to be.
To speed up cooking and even the cooking process, the chicken is cut into parts before baking.
The flavorings of this chicken is as simple as it is surprising: sumac with a tinge of turmeric.
The tangy sumac transforms upon cooking, and lends a unique flavor to the chicken.
I served it on a bed of Iraqi carrot rice.



Ingredients:

1x1.5 kg chicken
3 Tbsp sumac
1 tsp turmeric
1 tsp salt
1/2 tsp pepper
drizzle oil


Method:

Preheat oven to 400F.
Cut the chicken into 8 pieces.
Place in a baking dish and drizzle lightly with oil.
Mix the sumac, turmeric, salt, and pepper.
Rub this mixture all around the chicken pieces.
Put the chicken skin-side up.
Cover the dish with foil and bake for 1 hour.
Uncover and bake for 20 to 30 minutes more.
Serve hot.
