I could live on appetizers and side dishes.
And dessert.
Don't you find the best part of a meal are the apps and the sides?
And dessert.
Appetizers can easily contain all the food groups, rendering the main dish moot in my opinion.
Really, I find myself at a buffet completely ignoring the main dish section and picking and choosing at the salad bar and the desserts.
Cooking at home however, is a different story.
This pear and blue cheese crostini are a play on Pear Walnut Blue Cheese Pizza.
This time, I opted to keep the pears large enough to remain visible, and lightly browned them to exert their sweetness in some butter. The rest was simply a matter of piling on top.
A must for blue cheese lovers to feast on.
Ingredients:
10 slices baguette, toasted
2 pears, cored and sliced
1 Tbsp butter
100g blue cheese
a handful pecans, toasted and coarsely chopped
honey, to drizzle
freshly ground black pepper
Method:
Heat the tablespoon of butter in a pan over medium heat.
Brown the pear slices on both sides in the butter.
Note: I add a pinch of sugar to help caramelization of the pears.
Drain and let cool.
Place a couple of slices of pear on a toasted baguette slice.
Top with some blue cheese.
Scatter the toasted pecans on top.
Finally, drizzle with some runny honey and a good grinding of black pepper.
Serve immediately.
