644. Green Pea Mint Dip


This recipe surprised me in the best of ways.
It is delicious, hearty, and filling, without a carb in sight!

It may seem a little boring to serve this dip with carrot sticks, but they are completely brought to life when sprinkled with some fresh lemon juice.
The fresh mint leaves and mellow tahini make this dish.
It sure doesn't hurt to be completely in love with peas, either!
If I had to choose one word to describe this dish, fresh would come just before filling and nutritious.


Ingredients:

3 cups frozen green peas
1/4 cup fresh mint leaves
1 lemon, zest and juice
1 clove garlic
2 Tbsp olive oil, plus more for drizzling
1 Tbsp tahini
1 tsp salt and pepper


Method:

Cook peas in salted boiling water until tender, 1 minute. Transfer to an ice-water bath; drain.
Pulse peas in a food processor with mint, lemon zest and juice, garlic, 2 tablespoons olive oil, and tahini.
Season with salt and pepper; drizzle with oil.
Serve with peeled carrot sticks drizzled with fresh lemon juice.
