1013. Baked Turkey and Cheese Sandwiches


I recently discovered the most delightful Brazilian blog with so many amazing dishes and beautiful pictures. While I did spend way more time than anticipated pinning left, right, and center, this cheesy bubbly oven baked sandwich casserole stuck in my mind. Layers of cheese, deli turkey breast, and tomato are sandwiched between bread and topped with an unctuous cheesy, mustard-cream sauce.
Then the magic happens in the oven for 20 or so minutes, upon which you are left with a golden bubbly sandwich dish ready to feed four hungry people. This was amazing with a few dots of hotsauce. Works great for a weekend breakfast, or a quick lunch or dinner. Adapted from Olivia.


Ingredients:

1 loaf soft toast (sandwich bread)
220g sliced deli turkey breast
1 1/3 cup shredded mozzarella cheese
1 tomato, peeled and sliced
Salt and freshly ground pepper to taste
1 tsp oregano
1/3 cup mayonnaise
1/2 cup heavy cream
1 Tbsp Dijon mustard


Method:

Preheat oven to 400 F. Grease with butter a square oven proof dish (9X9).
Lay a layer of bread, cutting some slices in half if necessary to cover the bottom of the dish. Add a layer of sliced turkey and top with one cup of the shredded cheese, tomato slices, salt, pepper and oregano. Finish with a second layer of ham and the final layer of bread.
In a medium bowl, whisk together the mayonnaise, heavy cream and Dijon mustard until smooth. Pour the sauce over the sandwiches, sprinkle with the remaining third cup of shredded mozzarella and bake in the preheated oven for 20-25 minutes or until bubbly and golden brown.
Serve immediately.
Note: Peeling the tomato by plunging in boiling water for 10 seconds then into ice water made all the difference to me. I usually do not like tomato in my sandwiches, but in this case, the peeled tomato were an essential component to make this dish successful.
