Bran muffins are one of my favorite excuses of felling better about having cake for breakfast. There are already one or two bran muffin variations on MCW, and this is a well deserved addition to the collection. As a self-admitted affectionado of the date fruit, I was particularly happy about adding that distinct sweetness and mega nutritional value to the already nutritious muffin.
The fiber content of this muffin is high, and the energy boost is just what some mornings may need together with a steaming mug of black coffee.
Ingredients: makes 20 cupakes
2 eggs
pinch salt
1 cup brown sugar
1/2 cup oil
1 tsp vanilla
2 cups bran
1 cup flour
2 Tbsp wheat germ
1 tsp baking soda
1 cup pitted dates
1 cup yogurt (plain)
Method:
Preheat oven to 365F.
In a bowl, mix the eggs, salt, sugar, oil and vanilla. In another bowl, mix the bran, flour, wheat germ, and baking soda.
If the dates are had, soak them in hot water for about 10 minutes then drain before use. Add the chopped dates to the flour mixture. Alternating with the yogurt, stir the dry mixture into the egg mixture, being careful to mix only until just combined so as to not overmix.
Pour the mixture into a paper-lined muffin or cupcake tin until three quarters full.
Bake for about 15-17 minutes or until a toothpick inserted comes out clean.
