This is the MCW version of the classic chicken caesar salad, mostly because the dressing is different and anchovy-less than the original.
It really is as simple as it gets: lettuce, grilled chicken, croutons, and freshly grated parmesan. Be sure to dress just before serving.
1 head European lettuce
2 chicken breasts; grilled
1 1/2 cups croutons
2/3 cups freshly grated parmesan cheese
For the dressing:
2 cloves garlic
1 tsp salt & pepper
2 tsp dijon mustard
2 Tbsp mayonnaise
1 Tbsp vinegar
1/2 cup olive oil
1 Tbsp lemon juice
In the serving platter, layer the lettuce leaves to cover the base of the plate. Arrange the sliced grilled chicken, croutons, and shaved parmesan over the surface.
To make the dressing, pound the garlic and salt using a pestle and mortar into a paste. Whisk in the pepper, mayonnaise, and mustard. Slowly drizzling in the olive oil, continue to whisk until you have a thick, rich dressing. Stir in the fresh lemon juice.
Dress the salad just before serving.
