This is a quick and healthy bite that is surprisingly satisfying. The combination of fruit and cheese is an ancient classic, but these skewers go beyond with the addition of onion and a kick from a herby chilli sauce.
To be honest, you can probably just a easily saute the lot in a pan, but isn't eating food on a stick so much more fun?
Ingredients: serves 2-3
2 just-ripe peaches
1/2 medium red onion
220g halloumi
1 Tbsp olive oil
For the sauce:
1 cup packed basil
2 long green chilies, seeds removed
2 Tbsp lemon juice
3 Tbsp olive oil
2 tsp honey
1/4 tsp salt
Method:
Soak skewers in water for at least an hour before using.
Light grill or pan to medium-low heat. Cut peaches, red onion, and halloumi into roughly the same-sized chunks.Thread, alternating peaches, halloumi, and onion, onto the soaked skewers (roughly 3-4 of each). Continue with remaining skewers. Brush mix with olive oil and sprinkle lightly with salt and pepper.
Grill skewers, turning occasionally, until halloumi is beginning to char, 2-3 minutes per side. Remove from heat.
To make sauce, combine ingredients in a blender or food processor and run until pureed.
Serve skewers with basil puree.
