1062. Maryam's Tacos


I discovered tacos after my mother died. Before that, we would always eat elaborate home cooked meals together, cooked by her, الله يرحمها. After her, we saw a taco package at the store and that's how we got started. We have been having these tacos for years now, and while they are not totally Mexican-authentic, they definitely are inspired by the Mexican version. This is a very fun and informal meal where each person is encouraged to assemble and customize their own wrap.
A spiced mince meat mix, topped with a zingy-fresh pico de gallo salsa, jalapeno pickles, and cheese is wrapped in a pillow-soft warm tortilla and consumed on the spot.The optional dollops of sour cream are recommended for that decadent bite. This is very similar to my loaded nachos.


Ingredients: serves 4-6

For the meat:
1 onion, diced
450g minced meat
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1/4 tsp crushed red pepper
1/2 tsp salt
1/2 tsp pepper
1/2 cup hot water

For the pico de gallo:
3 whole tomatoes, diced
1 onion, diced
1/2 cup coriander, chopped
1 lime, juice
1/2 teaspoon salt
1 whole avocado (pitted and diced)

To serve:
2 cups grated cheddar cheese
4 Tbsp pickled jalapenos
sour cream, optional
soft tortilla wraps


Method:

Make the meat mix: In a skillet over medium-high heat, add the minced meat and the chopped onion. Cook it until starting to soften, and meat is totally browned. Add the chili powder, paprika, cumin, crushed red pepper, salt, and pepper and stir to combine. Reduce the heat to low and simmer while you prepare the other ingredients.
To make the pico de gallo salsa, combine the other chopped tomato, onion, coriander, lime juice, and 1/2 teaspoon salt. Stir it together and set it aside.
To build the tacos, let each person assemble their own. Place the wraps for about a minute or less in a hot oven to warm them up. Place a line of the beef mixture down the middle, topped with the salsa, jalapeno pickles, optional dollops of sour cream, and some grated cheddar cheese. Wrap up your wrap and consume immediately.
