This is a Martha Stewart recipe from the book Everyday Food. A very similar adaptation can also be found on her website. In Martha's words: "These Mediterranean-inspired veggie burgers pack in the flavor without adding on the pounds". Surprisingly satisfying, and packed with flavor; this recipe makes healthy look good.
Ingredients:
For the burgers:
3/4 cup toasted walnuts
1/3 cup plain dried breadcrumbs
3 cloves garlic, coarsely chopped
2 tsp ground cumin
2 tsp ground coriander
1/4 to 1/2 tsp crushed red pepper flakes
salt and pepper
3/4 cup lentils, cooked, drained, and cooled
4 Tbsp olive oil
1 large egg
For the sauce:
1 cup yogurt
2 Tbsp chopped fresh coriander (or cilantro)
1 Tbsp lemon juice
salt and pepper
To serve:
slider buns
tomato slices
onion slices
Method:
In the bowl of a food processor, combine walnuts, breadcrumbs, garlic, cumin, coriander, red pepper flakes, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; process until finely ground.
Add lentils and 1 tablespoon oil; pulse until coarsely chopped (some lentils should remain whole).
In a large bowl, whisk egg. Add lentil mixture; mix until well combined.
Divide into eighths; roll into balls, and flatten with the palm of your hands into patties.
Heat remaining 3 tablespoons oil in a large nonstick skillet.
Add burgers; cook, turning once, over medium-low heat until crisp and browned, 8 to 10 minutes per side. Transfer to a paper-towel-lined plate to drain.

i've been trying to adapt a vegetarian life style so when i saw this recipe i wanted to try it out. they were surprisingly tasty and filling. will be making these again for sure
