404. Freekeh Herb Salad: To Go


Freekeh, the ancient uber-healthy and tasty smoked green wheat grain, is the main component of this salad.

Any grain substitution would be just fine, but the smokiness of the freekeh gives a whole other dimension to the salad.
This is a substantial salad, which will have the body feeling satiated for hours.
The dressing is minimal, barely lemon juice and a little olive oil, but the fresh herbs make this salad dance.
I went for a medley of herbs, but you can use just one or two of your favorites just as well.
The salad is not smelly, it's not leaky, and it's not delicate. Perfect to pack and go.



Ingredients: (feeds two)

2 cups cooked freekeh,* cooled
2 Tbsp chopped dill
2 Tbsp copped coriander
2 Tbsp chopped parsley
20 leaves mint
1/2 red capsicum, diced
1 spring onion, green part, chopped
1 jalapeno, seeded, chopped
3 Tbsp feta cheese, cubed
1/2 lemon, juice
3 Tbsp olive oil
1/2 tsp salt

*made from 3/4 cup uncooked freekeh



Method:

Combine all the ingredients together, tossing gently.
Serve immediately or pack safely to go.
