Here is a wonderful soup that can be modified in more than one way to suit your taste.
To make this soup more figure-friendly, proceed with the recipe, just omit the cream.
To make this soup slightly thicker or thinner, adjust or omit completely the starch factor.
You can also puree the soup, and add some chopped broccoli pieces for texture.
In all cases, this soup will establish itself as a family favorite, and is as pretty as it tastes good.

Ingredients:
1 head broccoli
1 medium onion
1 celery stick
3 cardamom pods
2 bay leaves
3 cups water
2 stock cubes
3/4 cup cream
2 tsp cornstarch
Method:
In a pot, place the broccoli florettes, peeled and quartered onion, chopped celery stick, cardamom, bay leaves, stock cubes, and the water.
Bring to a boil, the simmer covered for about 15 minutes.
Set aside to cool slightly and discard the cardamom and bay leaves before blending.
Return the puree into the same pot, and dissolve the starch in a few teaspoons of cold water.
Return the puree to a boil over medium heat, then add the starch and stir until thickened.
Stir in the cream and serve the soup hot. You can adjust salt to taste.
