These sunflower seed chicken burgers or koftas are light and simple to make.
Using boneless skinless chicken breasts keeps the calories down as well as facilitates the making process.
Since minced chicken is not as commonly available here as minced beef or lamb, I just blitz it for a few seconds in the food processor. Be careful to not over-blitz though, or you will end up with a puree that will be difficult to handle and differs in texture. The seeds are stirred in post-blitz to keep them whole for a studded and crunchy effect.
Ingredients:
450g chicken breasts
1/2 tsp garlic powder
2 tsp dry basil
1 tsp salt
1/2 tsp pepper
3/4 cup peeled sunflower seeds
Method:
Cut the chicken breasts (skinless, boneless) into chunks and put in a food processor.
Add the garlic powder, basil, salt, and pepper. Blitz until reduced to a mince (do not over-blitz or it will become a puree).
Stir in by hand the peeled sunflower seeds.
Form into patties (at the size I chose, I got 15-16 patties).
Heat two tablespoons olive oil in a pan, and fry the patties on both sides until golden and cooked through.
Serve along side a hearty salad.
