When I hear of any pumpkin drink, I inevitably think of Harry Potter.
It's a bit confusing when people use the term pumpkin spice and then you find there is not pumpkin, just a combination of spices some people refer to as pumpkin spice. This recipe is not like that. It has real pumpkin in it.
To prove there's no such thing as leftover pumpkin puree, make this latte.
The puree gives the latte a rich thickness and substance without adding extra fat, and the spices make it ideal for a cozying up on a cold dreary day.
Ingredients:
1 1/2 cups milk
2 Tbsp pure pumpkin puree
2 Tbsp sugar
pinch of each: cinnamon, allspice, ginger, nutmeg
1/2 cup hot espresso or strong brewed coffee
Sweetened whipped cream, for serving, optional
Method:
Combine the milk, pumpkin puree, sugar, and spices in a medium saucepan and heat until the milk is hot, but not quite boiling.
Whisk vigorously or blend in a blender until the milk mixture is foamy, about 30 seconds.
Divide the espresso or coffee into two large mugs and add the foamed milk.
Top if desired with whipped cream and a sprinkle of extra spice.
