This delicious sandwich can be made in a pinch as a hasty lunch, but it is so much more than that.
Tasty haloomi cheese is grilled to a golden crust and sprinkled generously with zaatar and olive oil.
Next, vibrant ingredients (cherry tomatoes, olives, and onions) are stirred in and the whole is stuffed in a crusty baguette to make a rustic, wholesome,and thoroughly delicious sandwich fit for lunch any day of the week.
Ingredients:
220g halloumi
2 Tbsp zaatar
1 small red onion, sliced
2 Tbsp olive oil
3/4 cup cherry tomatoes
2 Tbsp black olives, sliced
Salt and pepper
Method:
Slice the haloumi into thin strips.
Heat olive oil in a pan and brown the halloumi on both sides.
Remove from heat and sprinkle with zaatar.
Add the tomatoes, olives and onion in the same pan, and toss well. Season with salt and pepper.
Slice the bread, layer the haloumi mixture in it and drizzle with extra virgin olive oil.
