If you have ever gone to a fair in the height of Summer and bought a punnet of fresh strawberries to dunk in sugar or cream, you will certainly appreciate this dessert. A bowlful of ripe, red, sweet-tangy strawberries served alongside some whipped cream cheese frosting to dip at your leisure is a must when these berries are in season.
Some people like to stuff the strawberries with the cream cheese, either by hollowing out the hull end or by cutting an X into the tip and piping the frosting in. My personal preference is to serve the two separately to dunk with as little or as much frosting as I want.
Ingredients:
500g fresh strawberries
250g cream cheese, room temperature
1/4 cup butter, softened
1 tsp vanilla
1/2 tsp salt
1 cup powdered sugar, sifted
Method:
To make the frosting, whisk the room temperature cream cheese, softened butter, vanilla, and salt until combined.
Whisk in the sifted powdered sugar.
If you want to stuff the strawberries, cut an X into the tips of the clean, dry strawberries keeping the bottom intact. Pipe some frosting into the opening of the cut.
I prefer to serve the strawberries on the side, so I put all the frosting in a bowl to serve with the clean strawberries.
