1227. Eggs in Buns


These eggs baked in bread buns are one of those rare recipes where it is almost just as much (or little, in this case) effort to make for one as it is for ten. It is also highly customizable to personal taste too.
Any form of cooked vegetables, cooked meat, smoked salmon, cheese, pestos, or spices/herbs can be incorporated. You can even scramble the eggs if you don't want a runny yolk today, and change up the bread bun (white/whole wheat/seed). Baking times will differ depending on how runny or not you like the yolk.


Ingredients: (for 1, multiply as needed)
1 crusty bread roll
1 egg
2 dried mushrooms, pre-soaked
1 Tbsp cream
1 small handful cheese
sprinkle of thyme
salt & pepper

Method:
Pre-heat oven to 390F
Cut the top off the roll and scoop out most of the middle.
Add a sprinkle of cheese to the bottom.
Roughly chop mushrooms and add inside, pushing them into the sides.
Crack in an egg and pour over it the cream.
Sprinkle over a little thyme, salt and pepper; top with more cheese.
Optionally add a few more herbs and extra pepper.
Return the bread top back on and wrap in foil.
Place on a baking tray and bake for 20mins (runny yolk) or 25mins (soft yolk) or 30mins (cooked through). Serve warm.
